You can also hide the default title block and create your own. In Schematic symbol library, draw your own title block, set Type to Graphical and you can use it. I may be doing video about this.
PS: You can put there Project parameters, so it will fill out automatically. I attached also the library file.

right click in schematic and choose document.. otherwise tools -> update paramters and only select documtent.. now all field that are user fillable are there for you to fill in..

In this case, you need edit the template file, should be in your C:/Users/public/Documents/Altium/Ad18/Templates and edit or create a file named *.schDot and add field as you need puting text and using the prefix =. For example: my field Project I use: Project: = ProjectName.
Save with extension *schDot and now you can use it as template proyect sheet
