About how to update width and spacing after new layer stack

how is it possible to update track width and spacing after having modified the layer stack ?

Yes, you can select the track by clicking on one track section and press Tab, which will select all copper on that layer.
Then in the properties you can change the width.
Additionally, in AD22 there is the "retrace" and "Gloss" tools (Route / Retrace selected, or Route / Gloss selected)

You can use filter and select for example all 0.1mm tracks and then change the width for all of them all at once in the properties panel. This video may help: https://www.youtube.com/watch?v=w9gxB6XVHnk
