In the starting of lesson 4 , you have shown detailed document for the PCB geometry with the extension ".stk"
Is this some standard reference document or it can generated for any PCB project in Altium (if yes then how?)

That is not our file. This was probably created by the PCB manufacturer or by the Polar software.
