Does a current sensing chip resistor (CSS0805) have a special symbol?

Nope nothing but a resistor, but you can do whatever you want in that sense that if you want to create your own special symbol it is what you make it..

but to my knowledge there is no " official " symbol for it

I guess attaching a designator to identify the type of resistor won't hurt.
