I have finished advanced pcb layout course. Are there any suitable projects with relevant recourses or courses that we can create a product to apply the things that we learnt. A project that could be completed in a short period of time would be better.

I think you would need to think of a product you would like to design.

Personally I am not someone for recreating an existing product for the sake of applying learned skills. Besides, you learn the most by doing something 'new'. Doing so, you make mistakes and you learn from mistakes.
