Rick Hartley has made video's about better layer stack-up for 4, 6 and 8 layers. Some of them are on youtube, while others are only for attendees of his training sessions (paid).

There are many parameters to consider for the number of layers.
What do you need (in no particular order)?
- Cost
- Thickness
- Cross talk
- (Gnd) reference plane
- Signal speed (rising edge)
- Current (copper thickness)
- Temperature
